This herby garlic roasted broccoli will be your new go-to roasted vegetable! It’s flavorful, perfectly tender yet crispy, and is a great side for just about any meal! Pair it with chicken, salmon, cod, burgers, nourish bowls… you name it!
How to cut broccoli florets
The best roasted broccoli is when you cut the florets into smaller pieces, rather than leaving them whole. This is because the broccoli more easily gets more tender while the outside gets perfectly crispy.
I always cut mine into small, bite sized pieces, which would be about 1 inch. You can do larger, just keep in mind it’ll take longer to bake, or you can increase the oven temperature to 400ºF.
Can I use another oil?
Absolutely! I call for olive oil in this recipe, but you can also use avocado oil, coconut oil, butter, ghee, etc.
Can I bake at a higher temperature?
Yes, if you want, you can bake at 400ºF instead. Keep in mind it’ll take less time! I do not recommend baking at higher than 400ºF unless you use coconut oil, butter, ghee, or red palm oil because avocado oil and olive oil do not have as much heat tolerance. Ingredients
2 heads of broccoli
3 Tbsp extra virgin olive oil
1 1/2 tsp granulated garlic
1 rounded tsp dried herb of choice (I used Italian)
1/2 tsp onion powder
1/4 tsp salt, more to taste
1/4 tsp ground black pepper
Optional Topping
You can drizzle this lemon tahini sauce onto the broccoli if you want!
Instructions
- Preheat oven to 375ºF.
- Wash broccoli, remove the stems, then cut into small, bite sized florets (about 1″).
- In a large bowl, toss broccoli with the olive oil, garlic powder, onion powder, dried herb, salt, and black pepper.
- Place broccoli onto a large parchment paper lined baking sheet or into a large glass or ceramic baking dish. Bake until tender and the outside is roasted and browned to your liking, about 25-35 minutes. Be sure to mix up the broccoli halfway through for even cooking.
- Remove from oven and serve immediately. Top with lemon tahini sauce if desired.
