Every bowl is customizable, making them perfect for weekend brunch with the family or even meal prep for the week ahead!

What I love most about this recipe is how balanced and filling it is while still using simple, nourishing ingredients. The combination of protein, healthy fats, and healthy carbs keeps you energized and satisfied until lunch. Plus, it stores well, so leftovers taste just as delicious the next day! You can serve all the ingredients separately or mix the warm rice, eggs, sausage, and beans together for the ultimate burrito bowl base. This recipe is comforting, flavorful, and incredibly versatile.

  • Ground sausage is rich in iron, protein, vitamin b12, and more. I recommend buying high-quality sausage. I use Mulay’s ground sausage, which I buy from my local Natural Grocers.
  • Eggs are a complete source of protein and are one of the richest sources of choline. They also have vitamin D3, folate, etc. 
  • Jasmine rice provides easily digestible carbohydrates that fuel the body and brain, along with small amounts of B vitamins and minerals that support energy production.
  • Broth is rich in glutamine, collagen, and gelatin and is a superfood for the gut, immune system, skin, hair, nails, and more.
  • Black beans are rich in plant protein, fiber, iron, magnesium, and antioxidants, supporting gut health, steady energy, and overall metabolic health.
  • For the healthiest dairy products, I always recommend buying grass-fed. Better yet, if you can support a local farm that has grass-fed cows and dairy products, then do that!

Ingredients for Breakfast Burrito Bowls

Breakfast sausage – I used Mulay’s ground breakfast sausage.

Eggs

Rice – I used jasmine rice

Broth – for cooking the rice

Black beans – I used canned black beans

Toppings – This is where you get to easily customize these bowls to your own preference, so use whatever toppings you want! Some great options are avocado, salsa, sour cream, shredded cheese, cilantro, etc.

How to make Breakfast Burrito Bowls

  1. Prep the rice: Thoroughly rinse 1 cup of white rice until the water runs clear. Put into a small pot with 2 cups of broth and turn heat to hight. Bring to a boil, then reduce to low, cover the pot, and cook for about 12-15 minutes until the broth is absorbed. Remove from heat and let steam for 10 minutes with the lid on. Then remove the lid and fluff with a fork.
  2. Prep the toppings: Get all the toppings ready that you are using, such as rinsing and draining the black beans (if canned), dicing the avocado, shredding the cheese, chopping the cilantro, etc.
  3. Make the sausage: Preheat a pan to medium-high heat and add the ground breakfast sausage. Cook, breaking up the sausage into pieces, for about 8 minutes until done.
  4. Preheat another pan and scramble the eggs. (unless you plan to use the same pan as the sausage – in which case you’ll just remove the cooked sausage onto a plate and cover, then use the sausage grease for scrambling the eggs). I personally prefer to cook the eggs in a separate pan.
  5. For photos, I kept everything separate. However, for real-life, I actually like to mix together the cooked rice, sausage, eggs, and beans in a big bowl (it’s especially yummy if you mix in some sour cream), then serve that in separate bowls as the base with the additional toppings put on top! This way all the cooked ingredients get spread out evenly and it tastes so good all mixed together (and it stores great as leftovers this way).

Mixing together the cooked rice, breakfast sausage, eggs, and beans in a big bowl makes it easy to split it all up evenly between servings – and the flavors meld together perfectly just like a burrito! I first had photographed everything in a bowl separate for the recipe, but ended up loving having the cooked ingredients all mixed together – then you serve it as the base with whatever fresh toppings you want, such as yogurt, avocado, salsa, shredded cheese, and cilantro.
