The ingredients
Coconut milk – Use canned coconut milk for this recipe. You can use either full-fat or light, but full-fat will create a thicker sauce. Light still creates a delicious sauce though!
Coconut sugar – The sweetener used for this recipe as a refined-sugar free alternative. Feel free to use another granulated sugar.
Maple extract – To create the “maple caramel” flavor. You can omit or sub with vanilla extract if desired.
Salt – To bring out the flavor. If you want a “salted” caramel flavor, then increase the salt in the recipe. Start with 1/2 tsp and add from there. I like using 3/4 tsp for the salted flavor.
The method
- You’ll dissolve the coconut sugar in the coconut milk and water, heating it in a small pot on the stove.
- Let the mixture simmer for about 15 minutes until it thickens a little.
- Add the maple extract and salt just before removing it from the heat.
- Drizzle over top of this Homemade Peach Ice Cream or other dessert of choice!
Modifications
- Instead of “maple caramel”, you can make it just a plain caramel sauce by replacing the maple extract with vanilla extract.
- To make it a salted caramel sauce, then you can add more salt. The recipe calls for 1/4 tsp for a regular sauce, but for a salted flavor, you’ll add between 1/2-3/4 tsp, depending on your preference.
- If you want a caramel syrup instead of a sauce: You’ll want to replace the coconut milk with heavy cream, add 6 Tbsp of unsalted butter, and double the coconut sugar (to 1 cup. (You can use salted butter, but in that case, start with a small amount of added salt to make sure the syrup doesn’t end up too salty)
Storing the sauce
Store the leftovers in an airtight container in the refrigerator for 1-2 weeks.

Ingredients
1/2 cup canned full-fat coconut milk* see notes
3 Tbsp water
1/2 cup coconut sugar
1 tsp maple extract
1/4 tsp sea salt, to taste (up to 1/2–3/4 tsp for “salted caramel”)
Instructions
Add the coconut milk, water and coconut sugar to a small saucepan.
Place over medium high heat and stir to combine. Bring to a boil, then reduce heat to low and simmer for 15 minutes or until mixture thickens.
Before you remove from heat add the maple extract and sea salt. Drizzle caramel all over the top of this Homemade Peach Ice Cream or other dessert of choice.
